2 teaspoons vanilla extract
1 cup sugar
1 1/2 cups crushed pecans
3 eggs
1 deep-dish pie crust
2 tablespoons melted butter
Preheat oven to 350 degrees. Mix together the corn syrup, sugar, eggs, butter and vanilla until smooth. Add pecans and mix well. Then pour into the pie crust and cook for 1 hour. Cool on a wire rack for 1 hour before slicing.
Carrot Cake Kubla Kahn
(A religious experience, even if you’re Lassiter!)
1/2 cup vegetable oil
2 cups sugar
4 eggs
2 cups flour
2 tsp. baking powder
1 1/2 teaspoon salt
2 teaspoon cinnamon
2 cups grated carrots
8 oz. of crushed pineapple
A sufficiency of both walnuts (chopped) and raisins to your taste.
For the icing
Combine and smooth:
4 oz. cream cheese
2 oz. sweet butter
1/2 lb. confectioners’ sugar
1 tbs. rum
Preheat oven to 350 degrees and combine the oil and sugar in a large bowl. Add the eggs one at a time, and beat until fluffy. In a separate bowl, sift the flour with the baking powder, salt and cinnamon. Add dry ingredients in increments to the egg mixture. Fold the carrots, pineapple, walnuts and raisins in (use as much of the last two as you like). Pour the batter into buttered or oiled nine-inch pans. Bake until done which can be upwards or above thirty minutes, depending on whether you useconvection and according to your oven and altitude. Cool before icing.
